Description
WINEMAKING:
Made with grapes from the slopes planted 12 years ago, with massive selections from the old vineyards of Porrera. Harvested with a careful manual selection in the first week of October 2018, it has fermented in different stainless steel tanks of 300, 500 and 1000 liters depending on the varieties, origins and fermentation systems. A part of the Carignan has fermented with whole skins and another with a small proportion of grapes with stalks and gently broken grains. The Grenache has been vinified following a "grape entiéré" procedure. With gentle pumping over to soak the cap and with temperature control, the different spontaneous fermentations of this wine have been carried out. After 12 months in French oak barrels, the blend was bottled on 27 February 2020.
TASTING NOTES:
The result of this first vintage is a fruity wine with a good entry in the mouth, the characteristics of the terroir of Mas d'en Caçador (Llicorella) are present. It is a sweet and persistent wine where the delicacy of the shady vineyards of Priorat is noticeable.
PAIRING:
Ideal for red meats, both grilled and with sauce, such as a steak with green pepper. Also stewed game meats.
Recommended tasting temperature between 14 and 16 ºC.
