WINEMAKING:

Wine made only with Xarel-lo grapes from the Ca N'Estella estate, from vines that are over 80 years old. At their optimum point of ripeness, the grapes were harvested by hand.

The elaboration of the wine is a mixture of the most modern and the oldest techniques. We proceed to a direct pressing, without treading or destemming. Subsequently, static racking is carried out. Two days after fermentation begins, the barrels are filled, where fermentation will continue for a month. The ageing continues in new French oak barrels for 5 months. The following 3 months will be in the barrels in contact with the lees and practicing the "Batonage".

After the months of aging, the processes of clarification, filtration, stabilization and bottling of the product were carried out.

A total of 4,500 bottles of this wine have been bottled, all of them numbered.

TASTING NOTES:

White Wine intense yellow colour with golden reflections and high density. The presence of abundant and persistent tears stands out. Very complex nose with hints of nuts and ripe fruit. Pleasant on the palate, it is balanced, dense and creamy. Long and persistent aftertaste, with toasted nuances.

PAIRING:

It is advisable to drink with all types of fish.

Serve between 8 and 9ºC.
