WINEMAKING:

Wine made from the Cabernet Sauvignon and Merlot grape varieties from the Ca n'Estella estate. 

The grapes are peeled and partially stepped on. It is then stored in refrigerated stainless steel vats in order to carry out a controlled fermentation at the same time as the maceration.

The maceration was carried out in order to extract the maximum colour while respecting the quality of the grapes. With two daily pumping overs and the shaking of the grapes, the young wine is transferred and crushed with the skins.

The malolactic fermentation is then carried out in stainless steel tanks. In January, the wine is placed in new French oak barrels where it will stay for 4 months (oxidative aging). Then the barrels are emptied, the wine is stabilized and bottled to be able to carry out the aging in the bottle (reductive aging).

TASTING NOTES:

A high layer black wine, cherry red with ruby highlights. High presence of fine, elegant and persistent tears. Of great aromatic intensity, the presence of toasted and spicy aromas stands out. Of first pleasant impression it evolves with great unctuosity and integration. Full-bodied, with high quality tannins, it is long and persistent.

PAIRING:

Ideal for accompanying cheeses, especially very cured cheeses, red meat, stews and game.

Serve between 13 and 16ºC.
