WINEMAKING:

The vineyard of "La Vinya de Coster" is a single estate vineyard located in Poboleda. The average age of the Carinyena vines is 90 years. The name of the plot is "Salanques" and it is located at 575 m above sea level. The soil is black slate, "Llicorella" soil and the viticulture is organic.

The grapes are harvested in two stages, a slightly greener portion to obtain natural acidity, and are fermented in stainless steel tanks. The rest, when they reach optimum maturity, are fermented in open barrels. This is followed by a long cold maceration at low temperature (6ºC) for 48 hours, to extract the primary aromas, and pressing in old basket presses. Low intervention, vinification carried out with indigenous yeasts. No enzymes, acidification or other adjustments.

Production of only 357 bottles.

TASTING NOTES:

Pure and mineral-pedernal nose loaded with concentrated red fruits. The palate is full, rich and intense with layers of sweet red fruits and a big heart of classic Priorat where minerality is noticeable. The tannins are juicy, silky and harmonious. A full-bodied wine with an elegant structure.

PAIRING:

Recommended to accompany stews, red meats, spicy food and pasta with strong sauces.

Serve between 15º and 17ºC.
