Description
WINEMAKING:
Wine made from the Ull de llebre (Tempranillo) and Samsó (Carignan) varieties from the Ca n'Estella estate. Harvested at the optimum point of ripeness, supported by a very demanding viticulture in terms of quality.
He tore himself up and partially stepped on it. It is then incubated in refrigerated stainless steel tanks in order to carry out a controlled fermentation at the same time as the maceration.
The maceration was carried out in order to extract the maximum colour while respecting the varietal fruitiness. The new wine was pumped over twice a day and shaken once. Afterwards, the malolactic fermentation was carried out in stainless steel tanks. In January, the wine was introduced into French and Hungarian oak barrels, where it will remain for 9 months (oxidative aging). The barrels are then emptied, the wine is stabilized and bottled for bottle aging (reductive aging).
A total of 10,500 bottles of this wine have been bottled, all numbered.
TASTING NOTES:
A red wine of medium layer, of ruby red color with orange reflections. Fine and elegant teardrop. With an intense and elegant nose, the harmony between the touches of forest fruits and memories of vanilla stands out.
Elegant in the mouth with a pleasant entry that gives way to quality tannins reinforced by a slight acidity. Long and persistent in the mouth.
PAIRING:
Ideal with semi-cured cheese and white meat.
Serve between 14º and 16º C.
